Macanese Sweet Potato Cake
180 g sweet potato or regular potato mashed
70 g condensed milk
100 g butter
140 g sugar
1 dl coconut milk
140 g flour
3 egg yolks
Cook the potatoes in little water, then mash into fine purée. Cream the butter and sugar until soft and fluffy; gradually beat in the eggs a little, one at a time.
Add the flour, the potato purée and the coconut milk. Finally, add the condensed milk, mixing well until blended.
Place in a buttered floured mould and bake it in a pre-heated oven at 200ºC for about 1 hour.
