1 large baking potato per person
Fried bacon bits, cooked prawns, baked beans, coleslaw, or whatever you prefer as a topping!
Grated cheese and butter
Switch oven to 220 ºC. Wash the potatoes and with a knife make some short but deep cuts right through the potatoes. Cook the potatoes in a microwave oven for 3 minutes per potato (e.g. for 4 potatoes cook for 12 minutes) turning them over at least once. When cooked and soft, place the potatoes in the previously warmed oven at 220 ºC. Roast the potatoes for 5 to 7 minutes, turning them upside down to crisp. When crisp, remove from the oven. Cut the potatoes longitudinally, butter them inside, mixing the butter with the potatoes, add the topping of your choice and sprinkle with grated cheese. Serve immediately while popping hot.
